I hate wasting food, so I try to be creative and use ingredients I might already have to inspire a meal. I decided to make bulgur with cranberries, celery & green pepper.
I added hot water to bulgur and set it aside for an hour. Then I diced up green pepper, celery, and pine nuts.
An hour later, I drained the excess water from the bulgur. I heated a tbsp of olive oil over medium heat, tossing in the bulgur, pine nuts and cranberries. After a few minutes, I cut off the heat and tossed in the green pepper, celery, a dash of balasmic vinegar and lemon juice.
You could serve this hot or cold. I really like the combination of fresh raw vegetables and hearty grains especially when its cold outside.
