Tahini is a paste made from pureed sesame seeds. Sesame seeds are a very good source of copper and manganese, and also a good source of calcium, iron, zinc, magnesium, phosphorus, vitamin B1 and dietary fiber. Sesame seeds also contain beneficial lignans which help lower cholesterol (WHFoods: Sesame Seeds, 2009)*.
Tahini is used in many Middle Eastern dishes such as hummus. It makes a great dressing for green or grain salads when mixed with lemon juice & garlic. But I recently found out that it also makes a delicious sweet treat. I found this recipe in my Recipes & Remedies for Rejuvenation Cookbook (Bauman, 2005).
It contains only simple 5 ingredients*.
Tahini, 1/2 cup
Unsweetened applesauce, 1 cup
Raisins, 1/8 cup
Lemon peel, 1 tsp diced
Cinnamon, 1/2 tsp
Mix together and voila! It makes a delicious spread for whole grain toast, a great dip for fruit or eaten with a spoon like a pudding. It's a great alternative for peanut butter. It's also vegan, gluten-free, and kid-friendly.
*Try to use organic/local ingredients as much as possible.
