Looking for an alternative to mashed potatoes? Well, here it is.
Cauliflower coconut mash
Adapted from Bauman College recipe
Chop up a head of cauliflower, and put in a pot. Mix in 1/4 cup of coconut milk, 1 tsp of curry, 1 tsp of cinnamon. Bring to a boil, reduce heat, and cover for 15 minutes. Mash with a potato masher or blend for a creamier consistency. Mix in cilantro and juice from half a lemon.
Enjoy along side your favorite main dishes.

Wow. I love coconut, maybe a little too much, so I'm definitely going to try this. Of course I have the Bauman book as well but seeing your post is more inspirational!
