Marinated mushrooms

An easy appetizer or side dish to accompany any meal. They also serve as a healthy afternoon snack as well.

Marinated mushrooms
1 container Crimini (or white) mushrooms, sliced
1 shallot, minced
4 tbsp cilantro (to taste)
1 tbsp, raw ginger
1 tbsp ume plum vinegar
3 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp olive oil
1 tsp thyme, dried
1 tsp cayenne

Wash and slice mushrooms. Mix remaining ingredients in a small bowl and add in mushrooms. Refrigerate for a few hours or overnight and serve.
