Fresh pea salad

There's nothing quite like fresh peas from the farmer's market. They taste good with about anything. This quick pea salad will take minutes to prepare. A perfect dish to bring to a summer potluck or picnic, especially in this heat.

Boil the peas for a few minutes until they're soft. Remove from heat, drain, and mix in diced carrots and bell pepper. In a separate bowl mix together olive oil, balsamic vinegar, salt, pepper, parsley, thyme, and red onion. Pour over the bean mixture and mix well. Garnished with quick pickled cucumbers.

Try different flavors by using red wine or cider vinegar, and different herbs like mint, basil, or cilantro. Brighten it up—increasing your antioxidant intake—with different veggies like cherry tomatoes, yellow bell peppers, squash or cucumbers.
