I'll be on the NC coast for the next week. I'm not taking my laptop (!). I'll be reading books, soaking up the sun, and enjoying the company of an amazing group of friends.
Making this watermelon, goat cheese & basil salad to enjoy with lunch through the week.

i've made a similar dish with feta, which was good, but my real love is goat cheese. definitely will try this the next time i get my hands on a watermelon!
