Super salad!



This salad calls for an exclamation point. It is full of antioxidants, fiber, vitamins and minerals. Oh and it tastes good too. This is a great meal by itself or eaten with a cup of miso soup. Feel free to add some brown rice to make it heartier. Make this salad tonight, so you can enjoy a healthy lunch tomorrow.


Super Salad
3 cups kale, rinsed and chopped into pieces
1/2 red onion, chopped
1/2 green bell pepper
1 tangerine, broken into segments
1 c edamame, cooked
2 medium carrots, chopped
1/4 c celery, chopped
1/4 c pomegranate seeds
1/4 c parsley

Mix everything together in a large bowl. Massage the kale pieces with your hands, so it breaks the leaves down a bit, making them easier to chew. Now make the dressing.


Spicy tahini
4 tbsp tahini
juice of half of a lemon
dash of sea salt & cayenne

Add the lemon juice to the tahini and stir with a fork. Add more lemon juice or a dash of water until the consistency is to your liking. Mix in the salt and cayenne. Add the tahini dressing into the salad (a sesame ginger vinaigrette would be a nice flavor too). Enjoy!

Looks like a mighty healthy salad! I keep meaning to use a bunch of kale we have at the moment, so might have to give this salad a whirl!

You should try morton's sea salt instead of normal sea salt. I find it tastes way better and didn't have the contentions sea salt has.
