Broccoli with caper vinaigrette

I've made this recipe once a week for the past three weeks. I love the flavor of the broccoli, capers, and lemon. It's a great side dish with soup for lunch or alongside portobellos and sweet potatoes for dinner.

Broccoli is excellent for you. Steaming broccoli helps the fiber components bind with the bile in your stomach, which helps excrete bile. This helps lower your cholesterol.


Broccoli with caper vinaigrette
1 bunch broccoli, chopped
1/4 red onion, chopped
1/4 c parsley, minced*
juice from 1/2 lemon
1 tsp red wine vinegar
1/2 dijion mustard
3 tbsp capers, rinsed
3 tbsp olive oil

Steam the broccoli until tender. While the broccoli's cooking, make the vinaigrette. Mix together the lemon juice, vinegar and mustard. The add the capers, onion, and parsley. Remove the broccoli from heat, drain, and put into a dish. Mix the olive oil into the vinaigrette, then add to the broccoli. Serve warm. Leftovers taste great as the flavors have had time to meld.

*Cilantro is great with this dish too.

Krysten, replace the broccoli with cauliflower, spinach or brussels sprouts. Let me know if you try it!

I love boiled broccoli with coconut oil on it.
