Make your own cashew butter


Sometimes the simplest things in life make us the happiest. Warm cookies right out of the oven, an extra hour of sleep or a conversation with a friend. This cashew butter falls into that category. The crunchy texture transforms into a smooth, decadent butter in a matter of minutes.

You'll need a food processor, vitamix or high-powered blender to make this. Simply preheat your oven to 350. Pour 2 cups cashews onto a baking sheet. Bake for 8 minutes. The nuts should begin to turn a light golden brown. Stir, so both sides get nice and toasted. Bake for a few minutes longer, if needed. Remove from the oven and toss into the food processor with a dash of sea salt. Blend on high for 3 minutes. If dry, add a tablespoon or two of oil (walnut, almond, or coconut). If you want to sweeten the nut butter, add a tablespoon of maple syrup and a pinch of nutmeg. Keeps in the refrigerator for up to a week.

Enjoy cashew butter smeared onto a banana as a snack or spread across toast with jam for breakfast.

Made it! And it's delish! Had to add a few tablespoons of walnut oil tho, but also baked a larger batch of cashews.

I made another batch over the weekend and added coconut oil. So delicious! Yeah I think the amount of oil depends on how creamy you prefer your nut butter :)

I love cashew butter even more then peanut butter. No joke. Tastes so good.
