I made a big veggie pizza last night for a meat-loving friend. He didn't seem to miss the meat, and it took no time to prepare. Just throw everything together and voila! A delicious, healthy dinner that no one can resist.
Dough from Lilly's *
Avocado oil
Garlic
Asparagus
Bell pepper
Onion
Broccoli*
Tomato*
Mozzarella
*local ingredients
Preheat oven to 350.
Chop asparagus, bell pepper, onion, and broccoli. Toss with oil, salt & pepper. Place vegetables on cookie sheet & roast until soft (10-15 min).
While veggies are cooking, chop garlic cloves (2-3) & mix with oil.
Spread dough out onto a cookie sheet & brush with oil/garlic mixture. Sprinkle mozzarella over the dough. Add the tomato slices.
Take veggies out of the oven & add to the pizza. Cook the pizza for about 12-15 minutes depending on the size. Take out of the oven & enjoy!
*the photograph was taken of a leftover slice of pizza the next morning. yes i ate it cold for lunch.
