Nectarine salsa

I made this salsa the other night to go with fish tacos. Not just any fish tacos, but citrus snapper with avocado and black beans. Mmm I salivate just thinking about that dinner. It was perfect on a hot summer evening, and would be ideal eaten outside with the ocean in the distance.

Nectarines tend to hold up well in salsa with their thick skin and firm flesh, more so than peaches I think. These nectarines are from a farm in Taylorsville, NC which happens to be across the lake from where I grew up.

Nectarine salsa
1 nectarine, diced
1/2 bell pepper, diced
1 small shallot
1/4 c cilantro
juice of 1/2 lime
salt & pepper

Mix well and serve as a relish for fish or grilled tofu. Or simply eat with corn chips.
