Soup for the sick

I woke up with a sore throat, runny nose and cough this morning. I've spent most of the day sleeping and watching movies on the couch. Luckily I had the few ingredients on hand I needed to make a quick and satisfying miso soup.

Miso is a great source of tryptophan, manganese, vitamin K, zinc, copper, protein, and omega 3 fatty acids. The mineral, zinc, is very beneficial to the immune system. Garlic has antibacterial and antiviral properties, and has been known to help regulate the body against infection.

Simple miso soup
2 tsp red miso*
1 c boiling water
1 large garlic clove, halved
Cilantro for garnish
1/2 tsp seaweed gomasio
1/2 tsp lime juice

Put the miso in a bowl. Boil 1 cup of water. When the water is ready, mix in a few tablespoons with the miso. When the miso is dissolved, pour in the rest of the water. Add the garlic, cilantro, gomasio and lime juice.

*Some people make miso soup with the lighter flavor of white miso.

So lovely and simple. I've been fighting with the flu, so this sounds perfect. So comforting for this time of year!

It's great with tofu, sweet potatoes or mushrooms too! I added extra garlic to help boost my immune system.
