What do all these photos have in common?
That's right, no meat! Have you heard of Meatless Mondays? It started as a campaign to improve individual health and the health of the planet. I think it's pretty cool that several of our American Presidents proposed No Meat Mondays during the world wars.
I'm not selling vegetarianism, but I am promoting more vegetables in your diet. I think one day designated to vegetables is a great idea, because we could all stand to benefit from more antioxidants, fiber, minerals and vitamins. Eating vegetarian all day, every Monday is a great way to try new vegetables and recipes. The website is a great resource to help you get started as well as this, this and this in the kitchen.

I eat meatless every day but I have a few friends and we do "veggie wednesdays" not really a cool ring to that but point being I agree it's a wonderful idea.

I was vegetarian for almost 6 years until 2010. I'm enjoying being an omnivore again but I do meatless mondays as part of my effort to eat meat conscientiously. I also buy local and organic whenever possible. I definitely think you can enjoy a varied diet and "eat green."
Heather, I totally agree. I eat mostly vegetarian, but I do crave chicken in the winter months :)

It's really funny you posted this because I have a BIG announcement on my blog about meatless Mondays coming up!
I am always a meatless girl, but I think this initiative is awesome for the general public. I hope we start seeing some changes take place as consciousness rises!
