Avocado boats


A few months ago, my roommate found a recipe that called for half an avocado filled with tuna salad. You cut an avocado in half and fill it with whatever you like. Simple, but something I'd never considered (even for being an avocado enthusiast!). A delicious heart healthy snack or appetizer. The healthy fats will keep you satiated, so you won't be reaching for that candy bar later.

I filled my avocado with cherry tomatoes, red onion, shredded cabbage, cilantro, jalepeno, vinegar, and a squeeze of lemon. I enjoyed a side of carrot-coconut-curry salad with raisins. Mmm. A tasty, raw (cooling) summer meal, when it's too hot to turn on the oven.
