High temperatures, cool dishes

It's going to be 98 degrees today. Yuck! I was seriously drenched with sweat from a morning run. I've lived in the South all my life, so you think I would be ok with the heat, but I like it less and less as I get older.

Hope you guys had a great holiday weekend. In case you missed it, I blogged over at FoodieFresh on Sunday and posted a few refreshing dishes like this chilled noodle dish. What do you eat when it's 98 degrees out?

Chilled noodles with kale & avocado
1 box of buckwheat (or soba) noodles, cooked according to package

1 c of kale, thinly sliced

1 medium cucumber, sliced
1/2 avocado, cut into chunks
1/4 red onion, chopped

1/2 c cilantro
2 tbsp rice vinegar
1 tsp honey

1 tsp tamari
juice of half a lime

2 tsp gomasio (or toasted sesame seeds)

1.5 tbsp sesame oil

Cook noodles according to package directions. Pour into a colander and rinse with cold water. Put noodles in a large serving dish. Massage the kale with you hands—before adding to the noodles—to soften the texture and make it easier to eat raw. Add kale, cucumber, avocado, onion and cilantro to the noodles. Mix vinegar, honey, tamari, lime, and gomasio. Add sesame oil, mix well, and pour over noodle mixture. Perfect dish to take on a picnic or a cookout with friends.

this looks so delicious!! I've only eaten soba noodles in an asian type soup. I might have to try this! Gee I wish it was Summer here!!
